Brevibacterium linens: This strain imparts moderate red/orange color to the rind of smear-ripened cheeses. Other traits of Linens W include: reasonably salt tolerant; sensitive to pH below 6.0, growing slowly in acidic environments; grows slowly to little at temperatures below 50ºF; moderate to strong lipolysis, proteolysis and aromatic potential. Freeze-dried format.

Minimum inoculation levels: 1 Dose per 1000 liters of milk if inoculated before rennet; 2 Doses per 1000 liters of milk using direct surface application
