Swiss Summit 2019 | March 27, 2019

Join us in beautiful north-central Ohio in March 2019 as Dairy Connection hosts its third annual “Swiss Summit.” The Swiss Summit is a day of seminars, discussion and networking specifically focused on topics related to the production of Swiss-style cheeses. The day-long event will again take place in scenic Walnut Grove, Ohio at very low cost to attendees. 

The 2019 Swiss Summit will include the following topics (subject to change), and more:

  • Milk composition & considerations
  • Cultures & Enzymes overview
  • Swiss make procedure overview
  • Guest Speaker: ACS Best-in-Show winning cheesemaker Chris Roelli of Roelli Cheese Haus in Shullsburg, Wisconsin
  • Setting up a testing program
  • Defects discussion

Speakers will include specialists from CHR Hansen, Foreign-type Cheesemakers Association, Dairy Connection, and more to be announced soon!
